Blueberry Mini Bread Recipe

Yield: 6 (or 8-9 muffins)

Ingredients

1 1/2 cups all-purpose flour
1/4 cup local honey
2 teaspoons baking powder
1/3 cup natural unsweetened applesauce
1 large egg
1/3 cup milk (I used 2%)
1 teaspoons vanilla extract
1 cup blueberries

Directions:

Preheat oven to 375

Mix all dry ingredients in bowl
Add honey, whisk lightly
Add all wet ingredients
Fold in blueberries

Bake 15-20 minutes until lightly brown and toothpick comes out clean

155 calories for each bread loaf
